Ingredients:

2 racks of lamb, frenched (approximately 1.5 pounds each)
2 tablespoons Dijon mustard
2 tablespoons fresh rosemary, finely chopped
2 tablespoons fresh thyme, finely chopped
4 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper

For the Rosemary Garlic Sauce:
1/4 cup unsalted butter
2 cloves garlic, minced
2 tablespoons fresh rosemary, finely chopped
1 cup beef or lamb broth
Salt and pepper to taste

Instructions

Step 1: Preheat the oven to 425°F (220°C).

Step 2: In a small bowl, combine the Dijon mustard, chopped rosemary, chopped thyme, minced garlic, olive oil, salt, and black pepper to create a herb crust mixture.

Step 3: Rub the herb crust mixture all over the racks of lamb, ensuring they are evenly coated.

Step 4: Place the racks of lamb on a baking sheet, bone-side down, and roast in the preheated oven for approximately 20-25 minutes for medium-rare doneness, or adjust the cooking time to your desired level of doneness.
